I have since made this bread with 1/4c ww and the rest white and it was just as tender. Of course, that's not much ww flour! It seems to work pretty well, but Matthew has so many flours for the various breads he makes (for customers!) that we don't keep any one hand any more.Anonymousnoreply@blogger.com
